I love rich, healthy brown rice and Red Rice from Thailand is wonderful. You can buy it in Asian super markets. It's not terribly expensive, and it has lots of flavor, a deep brown color and great character.
No matter what kind of rice you buy, consider adding Tumeric before you cook it. Tumeric is touted for it's good health benefits on the New York Times Eleven Best Foods You Aren't Eating list.
Add a large spoonful of peanut oil or canola or soybean oil to a heavy iron pot then a cup of uncooked rice. Heat it to high and stir it constantly until the rice kernels just begin to pop open. This usually only takes about 3 - 5 minutes. The gives the final cooked rice a nice burst look.
Have your water ready on the side. I use 2 cups of fresh cool water to each cup of uncooked rice. Add 2 chicken bouillon cubes instead of salt and a healthy dash of Tumeric. Cover and cook on low for 45* minutes to an hour or until all the water has been absorbed.
To speed cooking times, try using a pressure cooker to cook rice. In a pressure cooker, brown rice only takes about 20 minutes to cook.
Try adding a sliced or minced fresh onion after you add the cool water.
Rowdy Rice is really delicious both hot and cold. It's great for salads as well. It serves a great basis for our Rowdy Rice and Beans recipe and some of our other dishes. I hope you'll enjoy Rowdy Rice!
